Char Siu Tofu with Soba Noodles and Summer Vegetables


This Sunday at the Fairmount Neighborhood Farmers Market, held between 10 am - 2 pm on the corner of Agate and 19th Ave., stock up on summer produce from Camas Swale Farm and pastured meat and poultry from Fair Valley Farm and Fog Hollow Farm.


A favorite summer meal in our household is bibim guksu, where lightly seasoned soba noodles serve as a palette for your choice of vegetables and protein. Last Sunday I used Camas Swale produce to make sides of crunchy cucumbers, seared padrone peppers, a smokey eggplant salad, and sweet and sour summer squash. For a protein I made these seared char siu tofu slabs from Andrea Nguyen's Vietnamese Food Any Day. It's a great recipe because you don't have to bother with pressing moisture out of the tofu, but rather you mix up your marinade in an unheated skillet, let the tofu absorb the flavors as you heat and evaporate the liquid, and then end by searing the slabs in a little oil in the same pan. If you spend Sunday afternoon prepping your fresh market produce into these delicious sides, your Monday and Tuesday self will thank you for the multitude of mix and match dinners you can put together in a flash.


Char Siu Tofu with Soba Noodles and Summer Vegetables
noodles
300 g (3 circular packets) of soba noodles
Cook in salted boiling water until barely cooked through (about 5 minutes), then immediately rinse under cold water until entirely cooled. Toss with a drizzle of sesame oil to help prevent the strands from congealing. 

sauce
2 Tbsp soy sauce
2 tsp rice vinegar
2 tsp sesame oil
1 tsp honey
1 tsp Korean gochujang paste for a mild, kid-friendly sauce, or more as desired 
1 Tbsp sesame seeds
Mix together all the ingredients. Taste and adjust flavorings as desired.

Char Siu Tofu (adapted from Andrea Nguyen's Vietnamese Food Any Day)
14 ounces extra-firm tofu
1 Tbsp soy sauce or Bragg Liquid Aminos
1/4 tsp Chinese five-spice powder
1 Tbsp hoisin sauce
2 Tbsp canola or other neutral oil

Cut the tofu block into 8 1/2 inch thick slabs. In a large skillet, combine the ingredients except the tofu and mix well. Add the tofu and turn several times, then arrange flat in the skillet. Set the skillet over medium heat and when the sauce starts to bubble, in about two minutes, use a spatula to flip the tofu. Continue cooking to allow the seasonings to concentrate and stick to the tofu. When little liquid remains in the pan, drizzle 1 Tbsp oil over the tofu, shake the pan and flip the tofu again. Let the tofu sizzle for 3 to 4 minutes to dry out and brown.  Drizzle on the remaining 1 Tbsp oil and flip again. The finished tofu will have be orange-brown with some dark brown spots. Remove the pan from the heat and let the sizzling subside.  

Chinese smokey eggplant with garlic (adapted from Fuchsia Dunlop's Every Grain of Rice)
2 large eggplants
2 cloves garlic
2 tsp light soy sauce
2 tsp Chinkiang vinegar
2 Tbsp chili oil with its sediment (or use a diced fresh hot pepper and 2 Tbsp sesame oil)
1 tsp sesame seeds
2 Tbsp finely sliced scallions (green part only) 
cilantro leaves for garnish (optional)

Char the eggplants on a grill, under a broiler, or using the broiler of a toaster oven, for about 30 minutes, or over gas flames for about 10 minutes, turning with tongs, until they are completely soft and collapsed. At the same time, roast a couple of cloves of garlic in a small cast iron pan on the grill, under the broiler, or on the stove, until soft (if you don't mind raw garlic, you can skip this step). Cool the eggplant until you can handle them and then peel off the charred skin with a pairing knife or your fingers. Place the softened pulp in a strainer for about 15 minutes to drain out some of the liquid. Mince the garlic and chop the eggplant pulp. Combine in a bowl and toss with the remaining ingredients. Garnish with cilantro leaves if you like and serve.

Sweet and sour summer squash (from Fuchsia Dunlop's Every Grain of Rice)
2 zucchini
salt
2 Tbsp cooking oil
2 garlic cloves, finely sliced
1/2 tsp sugar
1 tsp Chinkiang vinegar

Quarter the summer squash lengthwise, and slice thinly. Toss with 1/2 tsp salt, mix well and set aside for 30 minutes or so to sweat. When you are ready to cook, squeeze the slices to get rid of excess water. Heat a wok over a high flame. Add the oil, then the garlic, and stir-fry for a few seconds until you smell its fragrance. Add the squash and stir-fry until they are hot and just cooked, but still a little crisp. Add the sugar and vinegar, with salt to taste, stir a couple of times, then tip on to a dish and serve.

Instant Pot Miso Glazed Turnips and Macaroni and Cheese


On this beautiful spring weekend, plan a visit to the Fairmount Neighborhood Farmers Market, Sunday 10 am - 2 pm at the corner of Agate and 19th Ave. You'll find fresh produce from Camas Swale Farm and pastured meat and poultry from Fair Valley Farm and Fog Hollow Farm. 



Last weekend Camas Swale had a stunning selection of turnips, both creamy white and bright magenta. Lately I've been using my Instant Pot to cook root vegetables. I'll start them in some butter, add a tiny splash of water and baking soda (to create an alkaline pH that encourages caramelization as described here). After the pressure cooking is done I'll simmer the vegetables for a little to reduce the liquid into a glaze and stir in some miso for extra flavor. For this dinner I also used the Instant Pot to make my new favorite macaroni and cheese using whey from strained yogurt, also made in the Instant Pot. Some roasted Camas Swale broccoli rounded out the meal.



Instant Pot Miso Glazed Turnips
1 lb baby turnips
2 Tbsp butter
pinch of salt
2 Tbsp water
1/4 tsp baking soda
1 tsp white miso

1. Rinse and trim the turnips and cut them into halves if they are very small or quarters or eighths for bigger ones. Turn on the Instant Pot saute function and melt the butter. Add the turnip pieces and a pinch of salt and cook, tossing, for a couple of minutes, until all of the turnip pieces are coated. Press cancel.

2. Mix the baking soda with the water. Pour over the turnip pieces, seal the lid, and pressure cook for 2 minutes on high. Press cancel and release the pressure by carefully opening the vent. Turn back on the saute function on high and cook for a couple of minutes to reduce the liquid in the pot to a glaze. Press cancel. Stir in 1 tsp of miso to coat the turnips. Taste and add more salt or miso as you desire. Serve warm.


Note: if you don't have an Instant Pot, cook the turnips on the stove top in butter and then simmer in a little water until soft, and finish with miso.

Whey Good Instant Pot Macaroni and Cheese
2 Tbsp butter (divided use)
1 lb elbow noodles
4 cups whey from strained yogurt (or use broth or water)
pinch of salt
1/2 tsp mustard powder or more to taste
6 ounces gruyere or other pungent Swiss cheese, grated
4 ounces aged sharp cheddar, grated
1 cup bread crumbs or panko
1/4 cup grated Pecorino Romano or Parmesan cheese

1. Use 1 tsp butter to grease a 9 x 9 inch baking dish. Turn on the saute function of the Instant Pot and melt the remaining butter in the pot. Press cancel. Add the elbow noodles to the pot. Stir the mustard powder and a pinch of salt into the 4 cups of whey or other liquid and pour that into the pot. 

2. Seal the lid and cook on high pressure for 4 minutes. While the noodles are cooking, preheat your broiler. When the cooking finishes, press cancel and release the pressure by carefully opening the vent. Stir in the grated Swiss and cheddar cheese. Taste a noodle and add more salt if needed.

3. Transfer the noodles to the greased baking dish. Sprinkle over the bread crumbs and Pecorino Romano cheese. Bake under the broiler for one or two minutes until the top is browned, keeping a close watch so that the bread crumbs don't burn. Serve warm.

Note: if you don't have an Instant Pot, cook the noodles in a pot on the stovetop with whey and some additional water as needed, then mix in the cheese and follow the rest of the recipe.

Tofu Puffs and Bok Choy Pickles


This Sunday at the Fairmount Neighborhood Farmers Market, stock up on pastured meats from Fair Valley Farm and Fog Hollow Farm and fresh produce from Camas Swale Farm, including plenty of root vegetables, squash, and bok choy.


We had a period last spring when we ate a lot of bok choy while my son was concocting a recipe for a 4J elementary school cooking competition with the theme of "healthy, kid-friendly Asian fusion" and extra points for using brown rice, tofu, bok choy, ginger, and garlic. He decided to hedge his bets and use all of the above. For the tofu, he made a ginger and garlic version of baked tofu cubes from Deb Perelman's Smitten Kitchen Everyday, coated with a soy sauce and cornstarch mixture that gives them a crispy surface, and they were an immediate hit. The first iteration of the bok choy was another matter. He had steamed these until quite soft and served them limply over plain brown rice. His older sister pushed hers around her plate with teenage contempt. My son initially wrote this off to her being a picky eater, but ultimately had to concede that she represented his target audience, who might be equally as picky. So he went back to the drawing board and came up with the idea of making quick pickles with the crunchy bok choy stems. This proved to be much more popular and had the added benefit of providing some sweet and salty pickle brine to drizzle on the brown rice. His recipe was chosen as one of the two representing his grade school in the citywide competition. The big day came when they all prepared their recipes in a cavernous cafeteria. Working with awkward knife guard gloves, abiding by food handling regulations, and producing 50 tasting samples were all challenging, but he stayed cheerful through it all and even came up with an eye catching Dr. Seuss-esque food plating design using denuded bok choy stalks.


Perhaps most rewardingly, his recipes have made their way into our regular family meal rotation, as in this rice bowl with tofu puffs.


Tofu Puffs and Bok Choy Pickles
for the tofu puffs
1 block extra firm tofu
1 Tbsp canola oil
1 Tbsp soy sauce
1 Tbsp cornstarch
1 Tbsp diced garlic
2 cloves garlic, diced

for the bok choy pickles
1 head bok choy (or two baby bok choy)
2 tsp sugar
1 tsp salt
1/4 cup hot water
1/4 cup rice vinegar

1. Preheat the oven to 400 degrees and line a rimmed baking sheet with parchment paper.

2. Set a pot of brown rice to cook.

3. Slice the tofu into 1/2 inch thick slices, and press between two cutting boards to drain off excess liquid. Cut the slices into 1/2 inch cubes.

4. In a large bowl, mix together the oil, soy sauce, corn starch, garlic, and ginger. Gently fold in the tofu cubes to coat with the soy sauce mixture. Spread them onto the parchment paper coated baking sheet and bake at 400 degrees for 30 or 35 minutes, turning once, until puffy and golden.

5. While the tofu bakes, prepare the quick pickles. Mix the sugar and salt into the hot water to dissolve and then stir in the vinegar. Allow to cool a few minutes.

6. Separate the leaves from the bok choy head and rinse well. Cut the white stems from the green leaves and reserve the greens for another use (stir fry or salad). Cut the white stems into 1/2 inch pieces, stir into the pickle brine, and allow to marinate for at least 30 minutes.

7. Serve the tofu puffs with brown rice topped with the pickles and drizzled with some of the pickle brine.

Mushroom Barley Risotto Cakes and Roasted Delicata

Fall is officially here and so are the fixings for cooler weather meals, like these mushroom barley cakes I made from leftover barley risotto and served with a salad of flat parsley leaves and roasted delicata squash


Mushroom Barley Risotto Cakes
(makes 4 patties)
~1 cup cooked barley risotto (see recipe below)
1 egg
1 cup breadcrumbs, divided
4 pieces of mozzarella cheese (optional)
olive oil for frying.

Mix together about 1 cup barley risotto with 1 egg and 1/2 cup bread crumbs. Spread the remaining breadcrumbs on a plate. Shape into 4 patties. If you like, you can stuff a piece of mozzarella in the center of each patty, so that it will melt when it cooks. Roll each of the patties in the remaining bread crumbs to coat. Heal a large skillet over medium heat and add a generous amount of olive oil. Add the patties and allow to cook, undisturbed, until nicely toasted. Carefully flip the patties and cook on the second side until browned. Serve at once, with a salad such as this one with kale and delicata squash.

Mushroom Barley Risotto in an Instant Pot

1 ounce dried porcini mushrooms
4 cups vegetable broth or water
2 Tbsp olive oil 
1 cup chopped cremini mushrooms
salt and pepper
1 tsp soy sauce
2 Tbsp butter
1 small onion or 2 shallots, finely chopped
1 cup pearled barley
1/4 cup white wine or white vermouth
1/2 cup grated pecorino romano

1. Use scissors to cut the dried mushrooms into bitesized pieces into a large measuring cup. Add the broth or water and microwave until the liquid has small bubbles. Let sit to rehydrate the dried mushrooms while you prepare the other vegetables.

2. Brush off any dirt from the cremini mushrooms and cut into quarters or eighths. Turn the pressure cooker to saute. Add the olive oil and cook the mushrooms, seasoned with salt and pepper, until they release their juices and then concentrate them. Add the tablespoon of soy sauce and allow this to absorb into the mushrooms. 

3. Add the butter and the chopped onions and cook until the onions are glassy. Now add the pearled barley and cook to coat in fat, about one minute. Add the white wine or vermouth and allow to cook down. Now add the rehydrated mushrooms and broth, pouring slowly so that any grit from the mushrooms is left behind. Set the pressure cooker to high pressure for 18 minutes. When the time is complete, carefully release the pressure. Turn the saute setting back on and stir in the pecorino romano. Taste and add more salt and pepper as needed. Serve warm.

Note: the risotto can also be made on the stove top, simmering for about 40 minutes until soft. You can double the recipe if you'd like to be sure to have leftovers for risotto cakes.

Seared Corn and Scallion Quesadillas


This Sunday at the Fairmount Neighborhood Farmers Market, you'll find pastured meats from Fair Valley Farm and Fog Hollow Farm and fresh produce from Camas Swale Farm, including tomatoes, eggplants, summer squash, peppers, and corn on the cob.


If you are exhausted from the first week back to school, plan to treat yourself to an easy supper of seared corn and scallion quesadillas, which are so simple that they don't need a formal recipe. Just heat a griddle or big skillet over medium high heat, give it a slick of oil, and throw on a husked corn cob and some whole scallions to sear. Meanwhile slice some cheddar cheese, rinse some cherry tomatoes, locate some tortillas and perhaps some other vegetables (above I had some leftover roasted radishes handy). When your vegetables have charred, slice the scallion and cut off the kernels into a bowl. Turn the heat to medium low. Toast a tortilla on one side until it starts to brown, then flip and cover with slices of cheese and the seared vegetables. Cook on the second side until the cheese has melted. Serve with cherry tomatoes and your favorite hot sauce.

Polenta with Herb Roasted Tomatoes


At the Sunday at the Fairmount Neighborhood Farmers Market this week you'll find pastured meats and eggs from Fair Valley Farm and Fog Hollow Farm, cut flowers from Tiger Lily Art Company, and fresh produce from Camas Swale Farm, including lots of tomatoes.



When tomatoes are at their summer sweetest, I love eating them lightly roasted with fresh herbs. As a vehicle for their fragrant juices, I decided to make some polenta, using this Bon Appetit recipe for Instant pot polenta cacio e pepe



While the polenta cooked (in just 9 minutes), I roasted a pan full of cherry tomatoes with rosemary. Then I sprinkled on some more delicate herbs (chives, thyme, and oregano), poured over the polenta and ran it under the broiler. At this point, one could let it cool and harden and cut wedges to eat, but we couldn't wait for that and instead ate it as a delicious porridge spooned into bowls.




Polenta with Herb Roasted Tomatoes
serves four
1 cup polenta 
4 cups water
1 tsp salt
generous amount of black pepper
2 Tbsp butter (divided)
1/2 cup grated Pecorino or Parmesan cheese (about 2 ounces)
2 Tbsp olive oil
1 cup cherry tomatoes
1 spring rosemary
several springs chives, thyme, and oregano

1. Preheat the oven to 450 degrees and put in a cast iron or oven safe skillet to warm. Rinse and the cherry tomatoes and herbs. Chop the rosemary leaves. Separately chop the other herbs.

2. In an Instant Pot, combine the polenta, water, salt and pepper. Cook on high pressure for 9 minutes and then release the pressure manually. Whisk the contents of the pot, adding 1 Tbsp of butter and the grated cheese, until it is a thick porridge. One can also prepare the polenta on the stove top like this.

3. While the polenta is cooking, remove the warm skillet from the oven. Put 1 Tbsp of butter into the skillet to melt and then add the cherry tomatoes and chopped rosemary and roll around to coat. Roast the cherry tomatoes for about 12 minutes until they have collapsed and released some juices.

4. Remove the pan from the oven and turn the setting to broil. Sprinkle the other chopped herbs onto the cherry tomatoes. Use a spatula to layer the cooked polenta onto the roasted tomatoes. Put under the broiler for about 5 minutes until the top is golden brown. Serve immediately, spooning into dishes, or allow the pan to cook until the polenta has hardened and can be cut into wedges. Enjoy.

Baked Zucchini with Mozzarella and Breadcrumbs


This Sunday at the Fairmount Neighborhood Farmers Market stock up on pastured meats and eggs from Fair Valley Farm and Fog Hollow Farm and fresh produce from Camas Swale Farm.


Now that summer is in full swing, we've been having a lot of salads for dinner, inspired by our farmers market finds. For this meal, I made a quick pan of baked zucchini topped with mozzarella and a sprinkle of scallion-spiked bread crumbs. We ate this gratin alongside butter lettuce, snap peas, roasted broccoli, buttery radishes, lentils, and hard boiled eggs. Not only are dinner salads a great way to enjoy fresh farm produce, but they lend themselves to relaxed summer meals when everyone can compose a personalized dinner plate masterpiece.


Baked Zucchini with Mozzarella and Breadcrumbs
4 small zucchini
1 punch green onions
1 ball mozzarella
1/2 cup breadcrumbs from stale bread
olive oil
salt and pepper

1. Preheat the oven to 450 degrees and place in a baking pan. Trim the zucchini ends and then slice lengthwise into 1/4 inch wide strips. Sprinkle with a pinch of salt and let sweat in a colander for a few minutes. Trim the roots of the green onions. Cut the white parts of the onions into 1/4 inch rounds and reserve. Cut the green parts of the onions into 1 inch lengths and reserve. Slice the mozzarella.

2. When the oven is hot, remove the baking pan, drizzle in some olive oil and spread with a brush to coat the bottom. Pat the zucchini strips dry and spread them over the bottom of the pan in a single layer. Sprinkle on the onion whites and a generous grinding of fresh pepper. Bake for about 7 minutes until the bottoms of the zucchinis start to brown. 

3. In the meantime, heat a skillet over high heat. Add a drizzle of olive oil and sear the green onions, stirring occasionally until they start to char. Add the breadcrumbs and a little more olive oil if needed and cook another minute until the breads smell toasted. 

4. Remove the zucchini from the oven and turn on the broiler. Flip the zucchini strips. Layer on the mozzarella and sprinkle over the green onion breadcrumbs. Broil for 1 to 2 minutes until the cheese is melted and slightly browned. Serve.

Pasta with Yogurt and Caramelized Leeks, Fennel, and Celery Root


This Sunday will be the penultimate Farmers Market of the season, so come out despite the rain. You will find fresh eggs and pastured chicken, beef, pork, and lamb from Fair Valley Farm and Fog Hollow Farm and an abundance of fresh produce from Camas Swale Farm, including a large selection of winter squash, leafy greens, onions, shallots, and leeks, and root vegetables such as beets, carrots, fennel, and celery root.



With my selection of root vegetables from last weekend's market, I decided to try a version of this recipe for creamy pasta topped with caramelized onions. This is the kind of recipe that is ridiculously easy (just coat pasta in Greek yogurt, of which I had just made a big batch in my new instant pot) and amenable to many variations, as long as you have enough sweet caramelized flavors to balance the tang of the yogurt sauce. We loved the notes of fennel and celery along with the caramelized leeks.



Pasta with Yogurt and Caramelized Leeks, Fennel, and Celery Root
adapted from Diane Kochilas' recipeserves 4 to 6
4 tablespoons extra-virgin olive oil
1 large or 2 small leeks
1 small fennel bulb
1 small celery root
Sea salt
1 1/2 cups (350 g) thick, strained Greek-style yogurt (see note)
1 pound pasta
1 cup coarsely grated Pecorino Romano 

1. Place a baking sheet in the oven and start preheating it to 375 degrees F. Prepare the vegetables. Trim the roots and green parts from the leek, halve lengthwise, rinse well, and cut into 1/2 inch slices. Trim the fennel bulb and cut into 1/2 inch cubes. Peel and trim the celery root and cut into 1/2 inch cubes. In a large bowl, toss the vegetables with the olive oil and a generous sprinkling of salt to coat. Spread the oiled vegetables onto the preheated sheet pan. Cook the vegetables, stirring frequently, until the vegetables become nicely brown and caramelized around the edges.

2. Meanwhile, fill a large pot with water and bring to a boil. As the water heats, add enough salt so that you can taste it. Add the pasta and cook until soft, not al dente. Reserve 1/2 cup pasta water. 

3. Combine the yogurt with 1/4 cup cooking water and mix well. Add more of the reserved pasta water as needed to get the sauce to your thickness. Drain the pasta and toss with the yogurt mixture and 1/2 cup grated Pecorino Romano cheese. 

4. Serve the pasta immediately, sprinkled generously with cheese and topped with the caramelized vegetables.

Roasted Cauliflower Larb


This Sunday at the Fairmount Neighborhood Farmers Market you will find fresh eggs and pastured chicken, beef, pork, and lamb from Fair Valley Farm and Fog Hollow Farm and an abundance of fresh produce from Camas Swale Farm, including: 

incredible pearly white cauliflower (try the larb recipe below)
brussels sprouts (great stir fried)
leafy greens (delicious roasted)
winter squash pumpkins (try a pumpkin gruyere soup


I love cauliflower, but I always cook it the same way, roasted, possibly with onions. I haven't yet succumb to the cauliflower rice craze that caused Draconian rationing measures at Trader Joe's. While I could keep eating roasted cauliflower every evening, I sensed some ennui on the rest of the family. This recipe from Bon Appetit caught my attention as a way to turn roasted cauliflower into something entirely new: toss it with fish sauce and fresh herbs as filling for lettuce cups



This is an unconventional version of the Laotian meat salad called larb or laab. The recipe has quite a few ingredients that require a trip to an Asian market (lemon grass and kaffir lime leaves), but a pared down version with just the fish sauce and fresh herbs is delicious. The one ingredient that makes it larb, rather than roasted cauliflower filling, is the toasted rice powder. You could skip this too, but it's easy to make while the cauliflower is roasting, and after browning and grinding up a 1/4 cup of rice, you'll have enough for multiple batches, which is a good thing because in our family lettuce wraps are always a big hit. 




Roasted Cauliflower Larb 
lightly adapted from Bon Appetit, serves six

1 large head of cauliflower, cut into large florets with some stalk attached
3 tablespoons olive oil
3 green Thai chiles, finely chopped (or keep on the side for people to add separately)
1 3-inch piece lemongrass, tough outer layers removed, finely chopped
4 kaffir lime leaves, finely chopped, or use lime zest
¼ cup fish sauce
¼ cup fresh lime juice
¼ cup glutinous (sticky) rice
5 scallions, thinly sliced
1 cup chopped cilantro
1 cup chopped mint
Kosher salt
Sliced Persian cucumber and Bibb lettuce leaves (for serving)

Preheat oven to 450°. Toss cauliflower with oil on a rimmed baking sheet. Roast, tossing occasionally, until tender and well browned, 35–45 minutes. Let cool slightly; chop into pea-size pieces. Transfer to a large bowl. Add chiles (if using), lemongrass, lime leaves or zest, fish sauce, and lime juice; toss well.

Meanwhile, place rice in a medium skillet and set over medium heat. Toast, shaking pan constantly to keep rice moving, until evenly browned, 10–15 minutes. Transfer to a plate; let cool. Grind in spice mill or with a mortar and pestle to a semi-fine powder.

Toss scallions, cilantro, mint, and 2 tsp. toasted rice powder into cauliflower mixture; season with salt. Serve with lettuce, cucumber, reserved chiles, and remaining rice powder to make lettuce cups.

Pasta with Chickpeas and Cherry Tomatoes


At the Fairmount Neighborhood Farmers Market this Sunday you will find fresh eggs and pastured chicken, beef, pork, and lamb from Fair Valley Farm and Fog Hollow Farm, as well as fresh cut flower bouquets from Tiger Lily Art Company. 

Camas Swale Farm will have plenty of summer produce including melons and watermelons, cucumbers, garlic, salad greens, pardon peppers, carrots, and tomatoes.  



This week I used a pint of Camas Swale's pretty heirloom cherry tomatoes to add bursts of color and sweetness to a pot of pasta with chickpeas, employing a cooking method that's become my personal obsession these days. Rather than bothering with boiling a pot of water to cook your pasta, you can simmer it right in the sauce with flavorful bean broth. The end result is the rich flavors of a minestrone soup, but with the texture of al dente pasta. My approach is to cook a pot of beans over the weekend for tacos, salads, or spreads, and then reserve a pint of beans and a quart of bean broth for a quick pasta dinner later in the week. This is the kind of dish that your future self with thank you for teeing up over the weekend.



Pasta with Chickpeas and Cherry Tomatoes
serves four
2 Tbsp olive oil
4 anchovy filets 
4 cloves garlic, minced
1/4 tsp Aleppo or red pepper flakes (or to taste)
2 Tbsp tomato paste
2 cups cooked chickpeas (instructions below)
3 to 4 cups chickpea broth, plus more boiled water as needed
1 pint cherry tomatoes, rinsed
8 ounces small pasta such as ditalini
chopped parsley for garnish
grated parmesan cheese for serving

Heat a large skillet or shallow pot (for which you have a lid) over medium heat. Also boil a kettle with a couple of cups of water. Add the olive oil and anchovies and break up the anchovies with your cooking spoon as you allow them to melt into the hot oil. Add the minced garlic and and red pepper and allow to cook until the garlic starts to brown and is very pungent. Stir the tomato paste into the flavored oil and allow caramelize for a couple of minutes. Then add the chickpeas and chickpea broth, the cherry tomatoes, and the pasta. Allow the pan to come up to a simmer, lower the heat medium low, and cover the pan. Cook the pasta, stirring frequently to dislodge the pasta pieces that will stick to the bottom of the pan. Keep an eye on the liquid level of the pan to make sure it is slightly soup and add splashes of boiled water as needed, or if it seems too watery then uncover the pan and raise the heat to allow the liquid to boil off. Start checking the pasta after about 8 minutes, but it will likely take a couple more minutes to reach a point where it is just cooked through but still very firm. Turn off the heat, cover the pot, and allow it to sit for a couple more minutes. Uncover, garnish with chopped parsley, and serve immediately with freshly grated parmesan cheese. Enjoy.

Cooked chickpeas
2 cups dried chickpeas
1 tsp baking soda
~8 cups water
1 bay leaf
2 Tbsp kosher salt

Sort and rinse the chickpeas. Place them in a pot with the water, baking soda, and bay leaf. Bring to a very gentle simmer and cook until tender, about 90 minutes depending on the age of the beans. I like to cook beans in a slow cooker, which takes about 3 hours. When the beans are tender, turn off the heat and add 2 Tbsp of kosher salt. Allow to cool. Strain the beans over a large bowl to collect the bean broth. Use the broth and some of the beans for this recipe. Remaining beans or broth can be frozen for later use.

Soba Noodles with Seared Scallions and Shishito Peppers

Camas Swale Farm will have lots of fresh produce: melons and watermelons, strawberries, garlic, salad greens, pardon peppers, carrots, and tomatoes, including heirloom, cherry, and paste (time to start stockpiling sauce for the winter).  


There are certain items one should pick up at the market regardless of your shopping list or menu plans. Our policy is to purchase padron peppers whenever available because they are always a special treat. Similar logic applies to Camas Swale's perfect melons, which don't require a recipe, beyond "eat." Less intuitive might be a bunch of scallions, although pretty purple ones like these are hard to resist.


Lately I've been making a habit of buying a big bunch of scallions and immediately cooking them down in oil into a couple of tablespoons of crisp, sweet, intense flavor. We first tasted these in Shanghai and then recaptured them with the help of Fuchsia Dunlop. It doesn't matter if you have a plan for these at the time, you will simply thank yourself later for having made them. This week we gobbled them up right away as a topping for some soba noodles along with some seared padron peppers, which are essentially the same as shishito peppers so I'm calling them by their Asian name for this dish


Soba Noodles with Seared Scallions and Shishito Peppers
serves four

seared scallions
1 large or 2 small bunched of scallions
1/4 cup neutral oil such as canola
Trim the roots off the scallions. Wack the whites with the side of a large chef's knife to split. Cut into 1 inch lengths. Heat the oil in a skillet or wok over medium high heat. Add the scallions and cook, stirring frequently. Keep cooking the scallions until they are quite browned, but avoid burning them. This will take patience and some nerve, but you will be rewarded with intense flavor. Transfer the scallions and oil to a small bowl.

seared peppers
1 pint padron or shishito peppers
2 Tbsp neutral oil such as canola
sea salt
In the same skillet or wok you used for the scallions, heat the oil over medium high heat. Add the peppers and allow to sear until well browned and blistered on one side. Use tongs to flip and brown the second side. Remove to a bowl and sprinkle with a pinch of sea salt.

noodles
300 g (3 circular packets) of soba noodles
2 Tbsp soy sauce
1 Tbsp sesame oil

Cook the noodles in salted boiling water until barely cooked through (about 5 minutes). In the meantime, mix the soy sauce and sesame oil in a serving bowl. When the noodles are done, immediately rinse them under cold water and then toss them in the serving bowl. Serve the noodles and top with the seared scallions and scallion oil and the seared peppers. Enjoy.

Gado Gado and Chicken Satay

When we were in Bali a few weeks ago, we took at cooking class at a restaurant in Ubud, Cafe Wayan, where we made (clockwise from top left) eggplant with sambal balado, chicken satay with peanut sauce, chicken curry in coconut milk, and a Balinese grilled fish salad.  


It all tasted wonderfully exotic, but in fact many of the ingredients were ones we have in our kitchen, and the flavors came from how they were combined, often in complex ground pastes, or cooked in unexpected ways. For example, the peanut sauce for the chicken satay, unlike our regular peanut sauce for noodles, was made by grinding fried peanuts with garlic and some tomato and then simmering in a pan with water. 


Last week we recreated this recipe at home, along with another Indonesia dish called gado gado, a composed salad of boiled and fresh vegetables that is also served with peanut sauce. We made a trip to Sunrise Market for small peanuts, kecap manis (a sweet soy sauce), palm sugar, and prawn crackers (little discs that puff up when fried and are traditionally served with gado gado).   


All the vegetables we sourced from the Fairmount Farmers Market, including fingerling potatoes, green beans, cabbage, cucumbers, and carrots. Almost anything could go into gado gado, so it is the perfect farmers market dish for any season, and once you've made a big batch of peanut sauce, the rest of the recipe scales easily for a crowd.


We served ours with hard boiled eggs and fried tempe, with chicken satay skewers on the side. It was a wonderful meal for reminiscing about our recent trip and my husband's family's years spent in Indonesia long ago.  


Gado Gado

peanut sauce (recipe follows)
lightly steamed cabbage leaves
boiled little potatoes
blanched green beans
fresh cucumbers and carrots
other steamed or fresh vegetables of your choice
cilantro
hard boiled eggs
tempe or tofu, sliced into thin strips and fried
prawn crisps and sambal oelek for serving

Prepare all of the vegetables, the hard boiled eggs, and the fried tempe or tofu. Serve with peanut sauce, fried prawn crisps, and sambal oelek.

Peanut Sauce (Bumbu Kacang) 
from Cafe Wayan (for four servings of gado gado)
100 ml water
100 g small peanuts (often called Spanish peanuts)
canola oil as needed for frying the peanuts
1 slice tomato
1 clove garlic
1 Tbsp palm sugar (or use white sugar)
a pinch of salt
1 Tbsp kecap manis (sweet soy sauce, or use regular soy sauce and 1 tsp sugar)
1 tsp tamarind paste or lime juice to taste

If using fresh, small peanuts, fry them in a small amount of canola oil until they harden and become fragrant. Drain on paper towels and season with a pinch of salt. Grind all of the ingredients together with a mortar and pestle or in a food processor. Place in a pan with 1/4 cup water and simmer over medium heat for 10-15 minutes, stirring to prevent sticking. Then add 1 Tbsp kecap manis and 1 tsp of tamarind paste. Combine, taste, and if needed add more salt, sugar, tamarind paste, or lime juice.

Chicken Satay (Sate Ayam)
from Cafe Wayan (serves four as an appetizer) 
1/2 pound boneless, skinless chicken thighs, cut into 1 inch cubes
3 cloves garlic, minced
3 Tbsp oil such as canola
3 Tbsp kecap manis (sweet soy sauce, or use regular 3 Tbsp soy sauce and 1 Tbsp sugar)
1 Tbsp lemon juice
mild chili
salt and pepper

Mix the ingredients thoroughly. It's best if you can marinate the chicken for several hours or up to a day. Thread the chicken cubes onto skewers and grill until cooked. Serve with peanut sauce.
