Also added celery, carrots, and roasted corn, and used some bean broth mixed with veggie broth instead of pumpkin broth. Soaked the beans all day, then put everything except tomato/pumpkin in the instant pot for 25 minutes. Then added tomato and pumpkin and did a quick 2 minute instant pot. Used an immersion blender at the end to thicken everything, leaving some beans unblended. If you don't soak the beans, add 15 minutes to the first instant pot. I used Swedith Maydor Beans because that's what I had, and I had already roasted the pumpkin. I couldn't resist making pumpkin pie and pumpkin scones (even before Thanksgiving!!), but still had plenty leftover in the freezer. Yum!!
